Beets

I had a post all typed up about how much I hate knitting, but 1) nobody would have believed it anyway, and 2) oh please, Mrs. Whiny. But since typing that post, I've had dinner, and I don't know whether it was dinner or the wine that went with it, but I'm feeling much better about knitting, so y'all don't have to read that post. Everybody wins!

I love beets. Sure, they smell like dirt, but I prefer to think of it as "earthy." They're sweet and tangy and delicious, and I only discovered my fondness for them a few years ago when I made pickled beets for my dad for his birthday. (Dad is smiling quietly to himself right now, remembering how 10-year-old Julie thought anything that looked as weird as a beet must be disgusting.)

There's only one problem with beets...they sort of make it look like there was a terrible accident in the kitchen.


Yeesh. But dinner was delicious - it was Rachael Ray's recipe for salmon with asparagus, beet sauce, and lemon-thyme rice. The kids had the rice and some fish sticks, because of course anything that looks as weird as a beet must be disgusting...

Oh look, it worked! I'm really not padding my own comments. Well, apparently I am, but not on purpose. Any comments about beets? Any at all? Bueller...?

I'm with the kids on this one. Beets are quite disgusting. I won't have them in my kitchen.

Mmmm, sounds wonderful to me! I only discovered beetroot last year, when our kind neighbour gave us a bucketful as he had grown more than they could eat. Homemade beetroot houmous is so delicious!
